Grilled Kippers

Ingredients
  Butter/Margarine 3 Tablespoon, melted
  Peanut oil 1 Tablespoon
  Pepper 1⁄4 Teaspoon
  Red onion slice 2 (1/2 Inch Thick)
  Green bell pepper 1 , seeded, sliced into 1/2-inch rounds
  Smoked kippers 2 (Available At Large Fish Markets)
Directions

Combine melted butter, oil, and pepper.
Brush onion, pepper slices, and kippers with butter mixture.
Preheat stovetop grill.
Cook onion and pepper slices over medium heat for about 1 minute on each side.
Vegetables will begin to brown and be warm.
Remove vegetables to a dish.
Grill smoked kippers over medium heat about 2 minutes on each side, covered with grill lid.
Remember that kippers have been smoked commercially and require only heating, so do not overcook.
Remove kippers and place 1 kipper on each plate.
Put onion slice and pepper rings on each kipper.
