Hearty Ham Borscht
|Meaty ham bone/2 smoked ham hocks||1|
|Water||6 Cup (96 tbs)|
|Diced fully cooked ham||2 Cup (32 tbs)|
|Chopped cooked beets||3 Cup (48 tbs)|
|Canned pork and beans||14 Ounce (1 Can)|
|Canned condensed tomato soup||10 3⁄4 Ounce (1 Can)|
|Frozen peas||1 Cup (16 tbs)|
|Chopped carrots||1 Cup (16 tbs)|
|Frozen cut green beans||1 Cup (16 tbs)|
|Onion||1 Medium, chopped|
|Snipped fresh dill/1 tablespoon dill weed||3 Tablespoon|
Place ham bone and water in a Dutch oven or soup kettle; bring to a boil.
Reduce heat; cover and simmer for 1-1/2 hours.
Remove ham bone; allow to cool.
Remove meat from bone and cut into bite-size pieces; discard bone.
Return meat to kettle.
Add ham, beets, pork and beans, soup, peas, carrots, beans, onion and dill.
Cover and simmer for 45 minutes or until vegetables are tender.
Garnish with sour cream if desired.
