Scalloped Potatoes With Ham And Swiss Cheese

Ingredients
  Butter 2 Tablespoon
  Onion 1 Large, halved lengthwise, thinly sliced
  All purpose flour 2 Tablespoon
  Milk 1 1⁄2 Cup (24 tbs)
  Dijon mustard 2 Teaspoon
  Nutmeg 1⁄2 Teaspoon
  Potatoes 6 Medium
  Smoked ham 8 Ounce, cut into 1 inch / 2.5 centimeter thin strips
  Shredded swiss cheese/Cheddar cheese 1 Cup (16 tbs)
Directions

1. In a medium saucepan, melt butter over medium heat. Add onion and cook for 3 minutes or until softened. Sprinkle with flour; slowly stir in 1/2 cup (125 mL) of the milk; cook, stirring, until thickened. Stir in remaining milk, mustard, salt and nutmeg to taste. Bring to a boil; cook, stirring, until sauce thickens.
2. Peel and thinly slice potatoes. Rinse under cold water; drain. Wrap in a clean kitchen towel to dry. Stir into sauce; bring to a boil. Stir in ham strips. Pour into baking dish.
