Spinach Spanakopita With Feta

  Spinach 2 Pound
  Butter 1 Cup (16 tbs)
  Small green onions 1 Bunch (100 gm)
  Parsley 3 Tablespoon
  Eggs 7 , beaten
  Feta cheese 1 Cup (16 tbs), crumbled coarsely to size of green peas
  Filo pastry sheets 1⁄2 Pound
  Salt To Taste
  Pepper To Taste

Clean and chop spinach and either let drain or dry with paper towels.
In a large bowl, mix together spinach, 1/2 cup melted butter, onions, parsley, salt and pepper.
Add eggs and feta cheese and mix all ingredients together.
Grease 10x14-inch pan with butter.
Melt remaining butter.
Place first sheet of filo in bottom of pan and brush with melted butter.
Place the second sheet of filo in pan and do not brush with butter.
Brushing butter over every other sheet of filo, place 8 sheets altogether in the pan before adding the filling.
Spread spinach filling evenly in pan, and cover with 7 sheets of filo, buttering every other one.
Then, butter top sheet very generously.
Cut the top layers of filo into squares and sprinkle the pie surface lightly with water.
Bake at 350° for 40 minutes or until filo is golden brown.
Remove from oven and cut pieces through to bottom of pan.
