Braised Beef Tongue With Vegetables

Ingredients
  Beef tongue 5 Pound (1 Piece)
  Water 1 Cup (16 tbs)
  Salt 2 Teaspoon
  Leeks 2
  White turnips 3 Medium
  Carrots 2
Directions

Scrub tongue and put in kettle.
Cover with water and add salt.
Bring to a boil and skim.
Chop leeks, peel and dice turnips and carrots.
Add to beef tongue and simmer 3 hours.
Remove tongue from broth.
Reserve broth.
Skin tongue.
