Pickled Garden Relish

Ingredients
  Cauliflower 1 Small, broken in tiny flowerets
  Carrots 4 , peeled, cut in 2-inch strips or julienned
  Celery ribs 4 Large (In 1 Inch Pieces, Long Ribs)
  Green peppers 2 , cut in 2-inch strips
  White onions 2 Small, thinly sliced
  Wine vinegar 1⁄2 Cup (8 tbs)
  Salad oil 1⁄2 Cup (8 tbs)
  Sugar 1⁄4 Cup (4 tbs)
  Chopped oregano leaves 1 Tablespoon
  Water 1⁄2 Cup (8 tbs)
  Salt To Taste
  Fresh pepper To Taste
Directions

In large kettle, combine all ingredients.
Bring vegetables to a boil, stirring occasionally.
Reduce heat to simmer.
Cover pan and cook for 5 minutes.
Cool.
Store in refrigerator.
