Pickled Garden Relish
|Cauliflower||1 Small, broken in tiny flowerets|
|Carrots||4 , peeled, cut in 2-inch strips or julienned|
|Celery ribs||4 Large (In 1 Inch Pieces, Long Ribs)|
|Green peppers||2 , cut in 2-inch strips|
|White onions||2 Small, thinly sliced|
|Wine vinegar||1⁄2 Cup (8 tbs)|
|Salad oil||1⁄2 Cup (8 tbs)|
|Sugar||1⁄4 Cup (4 tbs)|
|Chopped oregano leaves||1 Tablespoon|
|Water||1⁄2 Cup (8 tbs)|
|Fresh pepper||To Taste|
In large kettle, combine all ingredients.
Bring vegetables to a boil, stirring occasionally.
Reduce heat to simmer.
Cover pan and cook for 5 minutes.
Store in refrigerator.
