Creamed Finnan Haddie

Ingredients
  Finnan haddie 1 1⁄2 Pound
  Butter 4 Tablespoon
  Flour 4 Tablespoon
  Milk 2 Cup (32 tbs)
  Salt To Taste
  Ground pepper 1⁄4 Teaspoon
  Toast pieces 4
  Chopped parsley 2 Tablespoon
Directions

Cover the finnan haddie with cold water and bring to just below the boiling point.
Poach until fish can be flaked easily (about 5 minutes).
Drain and flake.
