I got this style of cooking CHICKEN ADOBO from my Mama. It's dry and not like with other version that has sauce.
3 Clove (15 gm)
1⁄2 Cup (8 tbs)
Black pepper powder
Place the chopped chicken in a mixing bowl. Add the oyster sauce, vinegar, black pepper powder, half portion of chopped garlic and marinate from 30min to overnight to taste.
After chicken is marinated, heat a large frying pan. Melt 1 tablespoon of butter and then add sliced onions and remaining chopped garlic. Once golden brown add marinated chicken and cook for 15min. Flip the chicken once in a while. (If your chicken is quite hard it’s adviceable to boil it before to proceed with the recipe) Add a cup of water, 2 tbsp. of oyster sauce and vinegar. Cook until chicken is tender and sauce thickens.
