Chicken Adobo is a popular dish from the Philippines. It's not only easy to make and low in carbs, it's really tasty!
  Chicken breasts/Chicken thighs 1 Pound
  Vinegar 1⁄2 Cup (8 tbs)
Soy sauce 1⁄2 Cup (8 tbs)
  Bay leaves 3
  Black peppercorns 1 Teaspoon
Garlic 4 Clove (20 gm), chopped

Place all ingredients in a ziploc or baking dish and marinate for a few hours. Place ingredients in a large saucepan and bring to a boil. Reduce heat, cover, and simmer for 30 minutes. Uncover and simmer until sauce is reduced. Cooking time will vary depending on the type of chicken used so cook until chicken is done!
