|Almonds||1⁄2 Pound, ground (blanched)|
|Sugar||1 Cup (16 tbs)|
|Confectioners sugar||1 Teaspoon|
Beat the egg whites until stiff but not dry, adding the almond extract toward the end.
Combine the almonds, sugar, and salt; fold in.
Drop by teaspoons onto a lightly buttered and floured cookie sheet.
Sprinkle with confectioners' sugar (put through a sieve).
Let stand uncovered at room temperature for 2 hours.
Bake in a 300° oven about 25 minutes, or until golden brown.
