Fresh Rhubarb Betty
|All purpose flour||1 Tablespoon|
|Rhubarb||1 1⁄2 Pound, cut in 1/2 inch pieces (5 Cups)|
|Soft bread cubes||4 Cup (64 tbs) (From 5 Slices)|
|Butter/Margarine||1⁄2 Cup (8 tbs), melted|
|Flaked coconut||1⁄2 Cup (8 tbs)|
Crate 1 teaspoon orange peel.
Peel, section, and dice oranges; set aside.
In mixing bowl combine sugar, flour, salt, and 1/2 teaspoon orange peel.
Stir in rhubarb and orange.
Add 2 cups bread cubes and 1/4 cup melted butter; mix lightly.
Turn into 8x8x2-inch baking dish.
Combine the remaining bread cubes, melted butter, remaining orange peel, and coconut.
Sprinkle over rhubarb mixture.
Bake at 375° till golden and rhubarb is tender, 35 to 40 minutes.
