You can get as generous as you want with the cheese in this Endive With Swiss Cheese recipe. I think this Endive With Swiss Cheese will be my choice for endives for some time to come. Great to taste!
  Water 1 Cup (16 tbs)
  Belgian endive heads 12 Small
  Swiss cheese 1⁄2 Pound, shredded
  Butter/Margarine 4 Tablespoon
  Salt To Taste
Half and half 1⁄3 Cup (5.33 tbs)

1. In 12-inch skillet over high heat, in 1/2 inch boiling water, heat endive to boiling. Reduce heat to low; cover and simmer 10 minutes.
2. Preheat oven to 350°F. Arrange 6 endive heads in 12" by 8" baking dish; sprinkle with half of cheese and dot with half of butter or margarine; sprinkle lightly with salt. Repeat. Pour half-and-half over all.
3. Bake 10 to 15 minutes, until cheese melts. Turn oven control to broil; place dish under broiler for about 3 minutes or until cheese is golden brown and bubbling.
