Danish Asparagus Tips
|Orange juice||30 Milliliter (2 Tablespoon)|
|Plain yogurt||125 Milliliter (1/2 Cup)|
|Chives||4 Teaspoon (20 Milliliter)|
|Smoked salmon slice||8|
|Hard boiled egg||1|
|Orange wedges||4 , sliced|
– In a saucepan filled with lightly salted boiling water, cook asparagus tips for 5 minutes, then rinse under cold water. Drain and set aside.
– In a bowl, combine orange juice, yogurt, chives, and 4 chopped smoked salmon slices. Season lightly with salt and pepper.
– Garnish each of 4 plates with a lettuce leaf. Place asparagus tips on top. Coat with sauce and set aside.
– Julienne 4 smoked salmon slices and spread over asparagus tips. Garnish with hard-boiled egg and orange wedges.
