Belgian Leek Soup
|Yellow onions/4 yellow onions, sliced||1⁄2 Pound, sliced|
|Potatoes||1 Pound, peeled and cubed|
|Beef broth||6 Cup (96 tbs)|
|Cream/Milk||1⁄2 Cup (8 tbs)|
Heat the butter in a large saucepan.
Add the leeks and saute 3 minutes.
Then add the cubed potatoes, beef broth and salt.
Bring to a boil and cook for 40 minutes, stirring occasionally.
Before serving, stir in cream or milk.
Place a slice of toasted bread in each soup bowl and pour the hot soup over the bread.
