Preheat oven to 250 °F (120 °C).
In a large mixer bowl, mix all ingredients, except vanilla extract.
(Make sure bowl is quite dry and that no particles of egg yolk remain in whites.) At maximum speed, beat 3-5 minutes or until meringue rises and soft peaks form.
Add vanilla extract.
At low speed, mix 7 minutes or until meringue is smooth, glossy and stiff.
Form into rosettes, spirals or cups.
