Quick Microwaved Irish Soda Bread
|Flour||2 Cup (32 tbs)|
|Baking powder||1⁄2 Teaspoon|
|Raisins||1 Cup (16 tbs)|
|Caraway seeds||2 Teaspoon|
|Buttermilk||3⁄4 Cup (12 tbs)|
|Baking soda||1⁄2 Teaspoon|
Sift together flour, sugar, salt and baking powder; cut in butter.
Stir in raisins and caraway.
Combine buttermilk, egg and baking soda; add to dry ingredients, stirring only until flour is moistened.
On floured board, lightly knead dough until smooth, about 1/2 minute.
Shape into ball and place in 1 1/2-quart casserole, bottom lined with wax paper; cut an "X" across top of dough.
Cook at MEDIUM 7 to 9 minutes.
Let stand, uncovered, 10 minutes; turn out of casserole.
Let stand upside down an additional 10 minutes; cool completely; store, covered, until ready to serve.
