|Boiling salted water||1 Cup (16 tbs)|
Pod the peas.
Put into a pan of boiling salted water with the mint and sugar.
Boil gently until tender about 5 to 7 minutes.
Strain and finish off by shaking lightly in the butter and seasoning.
If you start off with fresh young peas this is a classic dish.
The peas are bright green in color and very delicate and sweet to eat.
