Lemon Meringue Pie With Ready Prepared Meringue
|Grated lemon peel||5|
|Sugar||1 1⁄4 Cup (20 tbs)|
|Butter||1⁄3 Cup (5.33 tbs), melted|
|9 inch pie crust||1 , baked|
|Unbaked meringue||3 Cup (48 tbs)|
In a saucepan, mix lemon juice and peel with sugar.
While stirring, bring to a boil.
Remove from heat.
In a bowl, beat eggs, gradually folding in lemon mixture.
In a double boiler, stirring occasionally, cook around 45 minutes or until thick and creamy.
Off heat, fold in butter.
Let cool completely.
Pour into crust.
Preheat oven to broil.
Using a pastry bag with a fluted nozzle, pipe meringue onto pie.
Lightly brown in oven 1-2 minutes.
