|Vanilla essence||To Taste|
|Caster sugar/Granulated sugar / use half and half||4 Ounce|
Beat the egg whites until they are stiff and look dry and rocky.
Add half the sugar and beat again until the mixture is very stiff and will stand up in peaks.
Fold in the rest of the sugar and flavouring.
Force from a tube or put spoonfuls on a greased tray and bake in a slow oven, until quite dry.
