Les Carbonnades Flamandes

Ingredients
  Steak 2 Pound
  Bouquet garni 1
  Pepper 1 Pinch
  Beer 3⁄4 Pint
  Flour 4 Tablespoon
  Garlic 1⁄4 Clove (1.25 gm), chopped
  Salt 3 Teaspoon
  Sugar 1 Teaspoon
  Fat 2 Ounce
  Vinegar 2 Tablespoon
  Onions 1 Pound, sliced
Directions

Cut the steak in slices about 1/2 inch (1 cm.) thick and 3 inches (8 cm.) square.
Coat them well in the flour, salt, and pepper.
Fry the meat in the fat until brown.
Transfer to the casserole and fry the onions.
Add the rest of the flour and mix well.
Pour the beer into the frying pan and stir until it boils.
Pour over the meat and add the garlic, bouquet garni, and sugar.
Cover and cook slowly for 2-3 hours.
Add the vinegar just before serving.
