Easy Cooked Meringue
|Water||1⁄2 Cup (8 tbs)|
|Sugar||1⁄4 Cup (4 tbs) (plus 2 tablespoon)|
Combine water, sugar, and cornstarch in a small saucepan; cook over medium heat, stirring constandy, until transparent and thickened.
Beat egg whites (at room temperature) and salt at high speed of an electric mixer 1 minute.
Gradually pour cooked mixture into egg whites, beating 3 minutes or until stiff peaks form
