Creamed Finnan Haddie

|Half and half||1 Cup (16 tbs)|
Cut finnan haddie into 1 inch cubes.
Cover with boiling water and let stand about 5 minutes.
Drain very thoroughly Heat butter in a saucepan, stir in flour until smooth, then add half and half.
Season with cayenne and cook, stirring constantly, until smooth.
Let the mixture bubble 1 or 2 minutes; stir in finnan haddie.
Heat through; do not cook any further.
