Creamed Finnan Haddie

|Boiling water||2 Cup (32 tbs)|
|Minced green pepper||2 Tablespoon|
|Minced onion||2 Tablespoon|
|Minced canned pimiento||2 Tablespoon|
|Evaporated milk||16 Ounce (1 Tall Can)|
Place finnan haddie in shallow baking dish.
Add boiling water.
Cover with plastic wrap, cook in Radarange oven 6 minutes.
Let stand while preparing sauce.
Melt butter in 2 quart casserole in oven for 1 minute.
Stir in green pepper, onion, and minced pimiento.
Cook in oven 4 minutes, stirring twice.
Stir in paprika and flour until smooth.
Add milk gradually, stirring constantly.
Cook in oven 1 minute.
Drain fish, reserving stock (water in which it cooked).
Measure 1/4 cups stock into sauce.
Stir until blended and smooth.
Cook in oven 4 minutes, stirring 3 to 4 times.
Add finnan haddie flaked into pieces.
Cook in oven 2 to 3 minutes, until heated through.
