|White beans||2 Cup (32 tbs) (Small Sized)|
|Water||6 Cup (96 tbs)|
|Diced salt pork||1⁄8 Pound|
|Olive oil||2 Tablespoon|
|Garlic||4 Clove (20 gm), minced|
|Oregano leaves||1 Teaspoon|
|Canned tomato paste||6 Ounce (1 Can Of 6 Ounce)|
|Italian sausage||3⁄4 Pound|
Using a 6-quart covered ovenproof pan, simmer beans in water for 1 hour.
Do not add salt.
While beans are simmering, brown salt pork and remove from pan.
Brown ribs next and remove.
Add oil to pan and brown chicken.
Combine all ingredients with the cooked beans and bake at 325° for 2 hours.
Remove sausage and slice, return to pan and cook a few more minutes.
