Swiss Veal Foldovers
|Processed swiss cheese slices||4|
|Condensed cream of mushroom soup||1 Can (10 oz)|
|Boiled ham square||4|
|Rice||1 Cup (16 tbs)|
|Light cream||1⁄2 Pint|
|Cooking sauterne||3⁄25 Pint (0.5 Gill)|
Pound each veal slice to a very thin rectangle (about 8 x 4 inches).
Cut cheese and ham slices in half.
Stack alternately in centre of each veal fillet.
Fold veal over to cover cheese and ham, roll carefully in mixture of flour and paprika.
Brown in hot fat.
Mix remaining ingredients, add to pan.
Cover, simmer, stirring occasionally, 30 minutes or till tender.
