Make the blancmange asdirected on the packet, using milk and coffee instead of all milk.
Add 2 oz. sugar and the egg yolks and cook gently for a few minutes, without boiling.
Put into a dish.
Fold the rest of the sugar into the stiffly beaten egg whites, pile over the sweet and brown either in the oven or under a hot grill.
Decorate with grated chocolate.
