Dundee Cake

Ingredients
  Plain flour 10 Ounce
  Sugar 8 Ounce
  Butter 8 Ounce
  Eggs 5
  Soda bicarbonate 1⁄4 Teaspoon
  Blanched almonds 3 Ounce
  Grated orange rind 1
  Sultanas 1 Pound (Mixed)
  Currants 1 Pound (Mixed)
  Candied peel 2 Ounce
  Glaze cherries 2 Ounce
  Milk 1 Tablespoon
Directions

Cream sugar and butter.
Add beaten eggs and a little sifted flour very gradually, blending well until mixture is smooth.
Stir in the rest of the flour with the washed and dried fruit, the chopped cherries, half the almonds, chopped, the candied peel and grated orange rind.
Dissolve the bicarbonate of soda in the milk, and add to the mixture, stirring well.
Grease and line an 8 inch cake tin, and put in the cake mixture.
Spread the rest of the almonds, unchopped, on top, and bake in a very slow oven for about 3 hours, or until a probing skewer comes out clean.
