Swedish Fruit Soup
|Dried apricots||1 Cup (16 tbs)|
|Dried apples||3⁄4 Cup (12 tbs)|
|Dried peaches||1⁄2 Cup (8 tbs)|
|Prunes||1⁄2 Cup (8 tbs)|
|Dark seedless raisins||1⁄2 Cup (8 tbs)|
|Sugar||1⁄4 Cup (4 tbs)|
|Quick-cooking tapioca||3 Tablespoon|
|Cinnamon stick||3 Inch|
|Grated orange peel||1 Teaspoon|
|Red raspberry fruit syrup||1 Cup (16 tbs)|
Rinse dried fruits with cold water; remove pits from prunes.
Place fruits in a large kettle with the water; cover and allow to soak 2 to 3 hours.
Add the sugar, tapioca, cinnamon, and orange peel to fruits; let stand 5 minutes.
Boil, cover, and simmer 1 hour, or until fruit is tender.
Stir in syrup; cool, then chill thoroughly.
