Swedish Beet Apple Salad

Ingredients
  Sliced beets 1 Pound (Or Fancily Sliced)
  Cider vinegar 2⁄3 Cup (10.67 tbs)
  Dry minced onion 2 Tablespoon
  Sugar 1 Tablespoon
  Apples/2 small apples 1 Large, cored and sliced with peel on
  Salt 1⁄2 Teaspoon
  Pepper 1⁄4 Teaspoon
Directions

Drain beets, reserving juice.
Measure 1/3 cup beet juice and combine with 2/3 cup vinegar, sugar, salt, and pepper.
Pour over beets and sliced apples.
Let stand several hours to pickle.
