|Canned beets||16 Ounce (1 Can)|
|Sugar||1⁄4 Cup (4 tbs)|
|Lemon juice||5 Tablespoon|
|Egg||1 , well beaten|
Drain contents of can of beets, reserving liquid in a 1 quart measuring cup.
Put beets through food mill (or finely chop beets in an electric blender, adding about 1/2 cup of the reserved liquid to the blender container).
Add beet pulp to liquid in measuring cup and add water to make 1 quart.
Heat beet-water mixture, sugar, salt, and lemon juice to boiling in a saucepan, stirring occasionally.
Remove from heat and gradually add 3/4 cup of the hot mixture to beaten egg, stirring constantly; stir into beet mixture in saucepan.
Return to heat; cook, stirring, until simmering
