Pork enchilada is a popular Mexican dish made of tortilla rolls or wraps with a spicy pork based filling. The dish is baked after being bathed in the enchilada sauce with a topping of grated, shredded or crumbled cheese.

Emeril Lagasse’s Roasted Pork Enchiladas – This pork enchilada recipe by the celebrity chef, Emeril, calls for making the enchilada sauce by combining salsa, chicken stock, sour cream, salt and pepper and spreading it over the bottom of the baking pan. The corn tortillas are filled with a mixture of roasted pork, green chilies, freshly ground black pepper, queso Fresco cheese and caramelized onion and placed in the pan. More sauce is poured over the enchiladas and the dish is baked.
Pulled Pork Enchiladas – The enchilada sauce is cooked by sautéing onion and combining it with roux, tomato sauce, powered chili and cumin, garlic salt, cayenne and freshly ground black pepper. The filling is made by cooking pulled pork with caramelized onion and green chilies. The tortillas are fried in canola oil and rolled with the filling mixture. The rolls are placed in the baking dish already smothered with the sauce. The remaining sauce is poured over the rolls and the dish is baked with shredded cheddar and Monterey Jack cheese topping.
Pork Enchilada Casserole – The pork cubes are browned in oil and cooked for several hours in a slow cooker along with tomato dices, peppers, salt, cumin, garlic and chili. In the last few minutes, before taking off the cooker from the heat, cheese is mixed in. The pork mixture is spread evenly in a baking dish, covered with tortillas and several such layers are repeated ending with pork at the top. The top is sprinkled with salsa and cheese and the pork enchilada is baked.
