Cheese enchilada is a classic Tex-Mex main dish of tortilla rolls with a cheese based filling. The dish is generally prepared by baking. Cheese, in the preparation, is commonly used as a filling for the wrapped or rolled tortilla breads as well as a generous topping over them that is added before the dish is being baked. Most popularly, Cheddar and Monterey Jack are used for making this delicacy though any other cheese of choice like Defiance, Goat Cheese, Ashley Schackow, Philadelphia, Ohio or other such cheeses can be used. While the traditional cheese enchiladas are more identifiable with the black beans – goat cheese and queso anejo – radish combinations, the modern favorites are the enchiladas oozing with melted cheese and stuffed with fruits such as oranges, bathed in a rich brown chili sauce.
Ingredients: Tomato sauce, water, chili powder, garlic, dried oregano, cumin, tortillas, onion, shredded Monterey Jack and Cheddar cheeses, sour cream, fresh parsley, salt and pepper, shredded lettuce and ripe olives.
Preparation: The enchilada sauce is prepared by simmering a mixture of the sauce, spices and water. The cheese filling is made by combining the cheeses, cream, onion and seasoning. The tortillas are then rolled with some sauce and cheese filling. Once they are placed in the baking dish, the entire sauce is poured over them with shredded cheese topping. The dish is finally baked.
Serving: The lettuce, sour cream and olives are used for garnishing the dish.
Nutritional Facts: This particular dish equals to about 215 calories contributed by 16 grams of fat, 1 gram of fiber, 5 grams of carbohydrates and 12 grams of protein for every serving.
Cheese Enchilada Stack – This recipe does not call for rolling the tortillas and doesn’t even require making the enchilada sauce at home and so, it is quick to make. The corn tortillas are layered at the bottom of the baking dish and a readymade enchilada sauce is spooned over them along with caramelized onions, cheese and fresh green chilies. This is topped by yet another layer of tortillas and the same cheese topping is followed. The steps are repeated and finished off with the cheese topping. The dish is then baked. The dish can be made more filling with the addition of cubed chicken and black beans or ground beef and taco mixture.
Cheese Enchilada Casserole – This is an interesting variation which makes use of three different kinds of enchilada sauces viz tomato-jalapeno enchilada sauce, tomatillo sauce and chile raisin sauce. The tortillas are rolled with a mixture of avocado, sour cream, cilantro, onion and a crumbled Queso Fresco and Monterey Jack combination and baked.

Bobby Flay’s Goat Cheese Enchilada – This is a much adored preparation by the celebrity chef Bobby Flay. He suggests dipping the blue corn tortillas in red chile-tomato sauce and rolling up these sauce soaked tortillas with a filling of goat cheese, garlic, cotija cheese, lime juice, salt and pepper and cilantro. These tortillas are then baked in the usual process and served with a garnish of green onions, sour cream and cilantro.
