Skillet Enchiladas

Skillet Enchiladas is a unique and winning meat preparation that is perfect for your dinner parties. Surprise your guests with this exquisite dish. I am sure they will love the Skillet Enchiladas.
Ingredients
  Condensed cream of mushroom soup 1 Can (10 oz)
  Cooking oil 1 Tablespoon
  Enchilada sauce 1 Can (10 oz)
  Milk 1⁄4 Cup (4 tbs)
  Canned chopped green chili peppers 2 Tablespoon, seeded
  Frozen tortilla 8 (Or Use Canned Pieces)
  Shredded sharp american cheese 2 1⁄2 Cup (40 tbs)
  Chopped pitted ripe olives 1⁄2 Cup (8 tbs)
  Ground beef 1 Pound
  Chopped onion 1⁄2 Cup (8 tbs)
Directions

In a saucepan combine cream of mushroom soup, enchilada sauce, milk, and green chili peppers; heat till bubbly.
Thaw frozen tortillas.
Dip tortillas, one at a time, in the hot sauce just till tortillas become limp.
{Or, heat some cooking oil in a small skillet; dip tortillas in till limp.) Drain tortillas.
Set aside 1/2 cup cheese.
Place 1/4 cup cheese on each tortilla; sprinkle with olives.
Roll up as for jelly roll.
In skillet cook beef and onion till meat is brown and onion is tender; drain off fat.
Stir in hot sauce mixture.
Arrange tortillas seam side down in sauce in the skillet.
Bring to boiling; reduce heat.
Cover and cook till heated through, about 5 minutes.
Sprinkle with the remaining 1/2 cup cheese; cover and cook till cheese melts, about 1 minute longer.
Microwave cooking directions: In a 12x71/1/2x2-inch glass baking dish combine mushroom soup, enchilada sauce, milk, and green chili peppers.
Cook in a countertop microwave oven till bubbly, about 5 minutes, stirring 3 times.
Dip tortillas in hot sauce or cooking oil as directed above.
Fill and roll up as directed above.
In glass bowl crumble beef; add onion.
Micro-cook, covered, till meat is done, about 5 minutes, stirring several times.
Drain off fat.
Stir meat into sauce in baking dish.
Arrange tortillas seam side down in sauce.
Micro-cook, uncovered, till hot, about 8 minutes.
Give dish 1/4 turn every 3 minutes.
Sprinkle with remaining 1/2 cup cheese.
