Enchilada Vegetarian

Would you like to try an Enchilada Vegetarian Recipe? I have learnt this Enchilada Vegetarian Recipe from one of my Mexican friend. She is a very good cook. This is a vegetarian delight. This is eaten as an entrée. You should also try this Enchilada Vegetarian Recipe. You will love it.
Ingredients
  Tomato 2 , chopped (peeled)
  Chopped tomato 2 , peeled
  Green chili peppers 2 , chopped into small pieces
  Green chili peppers To Taste, chopped
  Salt 1 Teaspoon
  Sliced mushrooms 1⁄2 Pound
  Mushrooms 1⁄2 Pound, sliced
  Green peppers 2 , chopped into small pieces
  Green peppers To Taste, chopped
  Black pepper To Taste
  Vegetable oil 2 Ounce
  Spices To Taste
  Onions 2 Large, chopped
  Garlic 2 Clove (10 gm), chopped
  Onions 2 Large, chopped into small pieces
  Sour cream 2 Cup (32 tbs)
  Garlic 2 Clove (10 gm), chopped into small pieces
  Cheddar cheese 4 Ounce, shredded
  Tortillas 8
Directions

Step1. Heat the oil in a skillet and sauté the onions until tender.
Step2. Add the garlic, mushrooms, and green pepper. Cook for 4 minutes and stir in between.
Step3. Add the tomatoes, chili pepper, salt, pepper, and other spices and bring to a boil.
Step4. Reduce heat and simmer for 3 minutes, stir in the sour cream, and remove from the heat.
Step5. Divide half the mixture among the 8 tortillas, roll each one up, place them in a shallow baking dish.
Step6. Pour remaining sauce over the top and sprinkle with the cheese.
Step7. Bake at 400 degrees for 12 minutes or until done.
