Step1. Heat the oil in a skillet and sauté the onions until tender.
Step2. Add the garlic, mushrooms, and green pepper. Cook for 4 minutes and stir in between.
Step3. Add the tomatoes, chili pepper, salt, pepper, and other spices and bring to a boil.
Step4. Reduce heat and simmer for 3 minutes, stir in the sour cream, and remove from the heat.
Step5. Divide half the mixture among the 8 tortillas, roll each one up, place them in a shallow baking dish.
Step6. Pour remaining sauce over the top and sprinkle with the cheese.
Step7. Bake at 400 degrees for 12 minutes or until done.
