|Enchilada sauce||1 Can (10 oz)|
|Cheddar cheese||1 1⁄2 Cup (24 tbs), grated and divided|
|Black olives||1 Cup (16 tbs), sliced|
|Green onions||2 , sliced|
Preheat oven to 350 degrees.
Heat small amount of oil in frying pan.
Dip each tortilla in oil and fry on both sides until slightly firm.
Dip into heated enchilada sauce.
Place a tortilla flat in a round casserole dish.
Spoon over the surface 2 tablespoons of cheese, a few olives and green onions.
Add remaining tortillas, preparing each layer the same way.
Pour remaining sauce over the last layer; top with remaining cheese, olives and green onions.
Bake, uncovered, for 20-25 minutes.
Cut into wedges and serve.
