Enchiladas Made With Tofu

I love this Enchiladas Made With Tofu Mexican dish. And when I say love Enchiladas Made With Tofu-it means both eating and making it. One you should be trying today!
  Tomato sauce 28 Ounce (840 Milliliter)
  Garlic powder 25 Milliliter (1 1/2 Tablespoon)
  Onion 1 Medium, chopped
  Green chiles 2 Ounce, diced (60 Gram)
  Chili powder 4 Teaspoon (20 Milliliter)
  Basil 1⁄4 Teaspoon (1 Milliliter)
  Tofu 16 Ounce (480 Gram)
  Soy a melt 120 Milliliter (Cheddar Flavor, 1/2 Cup)
  Soy 120 Milliliter (1/2 Cup)
  Corn tortillas 12 Small
  Soy oil 30 Milliliter (2 Tablespoon)
  Black olives 2 Ounce, sliced (60 Gram)
  Soy 120 Milliliter (3/4 Cup)

Mix tomato sauce, garlic, onion, chiles, chili powder and basil together in a sauce pan and simmer for 15 minutes to create sauce.
Preheat oven to 350°F (180°C).
Drain tofu and crumble.
Grate Soy A Melt (all of the cheddar and 1/2 cup of the mozzarella) or dairy cheese.
Mix tofu and Soy A Melt together in a bowl to create filling.
Heat 1 1/2 tbs oil in frying pan; heat tortillas individually in pan until soft.
Use remaining oil to grease 9x13-inch baking dish.
Place filling in tortilla, roll and place in baking dish seam side down.
Cover with sauce.
Grate remaining Soy A Melt or dairy cheese and sprinkle on tortillas with sliced olives.
Bake covered for 15-20 minutes.
