Eggplant Stuffed With Ham

Ingredients
  Eggplant 1
  Salted water 1 Cup (16 tbs) (As Required)
  Onion 1
  Green pepper 1 , chopped fine
  Tomatoes 2 , quartered
  Butter 2 Tablespoon
  Salt 1⁄2 Teaspoon
  Pepper 1⁄8 Teaspoon
  Ham 1 Cup (16 tbs), diced and boiled
  Bread crumbs 1 Cup (16 tbs) (As Required)
Directions

GETTING READY
1.Start by preheating the oven to 350F degrees
2.Also wash and dry eggplant and also cut off a slice from top
3.Now scoop out inside to within 1/2 inch of skin
MAKING
4.In a bowl, cover shell with salted water and set aside
5.Meanwhile, chop eggplant pulp and combine with onion, pepper and tomatoes
6.In a pot containing small amount of boiling salted water, cook the mixture until tender
7.Once cooked drain and mash
8.Now add butter, salt, pepper and ham
9.Drain shell well and fill with mixture
10.Sprinkle top with bread crumbs
11.Bake in moderate oven for 25 minutes
SERVING
12.Serve with a sauce of your choice and with garlic bread
