Oven-Fried Eggplant

Oven-Fried Eggplant is a crispy and tantalizing dish that can be served at home or for parties. Follow this simple Stuffed Peppers recipe.
Ingredients
  Seasoned crumbs 1⁄2 Cup (8 tbs)
  Salt 1 Teaspoon
  Eggplant 1 Pound, pared (Small Size)
  Egg 1 , slightly beaten
Directions

Heat oven to 375°.
Grease jelly roll pan, 151/2 X 10 1/2 X 1 inch.
Mix seasoned crumbs and salt.
Cut eggplant into 1/2 inch slices.
Dip slices into egg, then coat with crumbs.
Arrange in pan.
Bake uncovered 15 minutes; turn and bake 15 minutes longer.
