|Butter/Margarine||1 Teaspoon (To Grease Baking Dish)|
|Egg yolks||2 , beaten|
|Grated cheese||1 Cup (16 tbs) (American, Or Kind Of Your Choice)|
Peel eggplant; cut lengthwise into 1 inch slices.
Place in bowl of cold salted water for 1 hour.
Drain; pat dry with paper towels.
Place eggplant in greased baking dish.
Sprinkle with salt and pepper; brush with egg yolks.
Sprinkle cheese over top.
Bake in 350Â°F toaster oven for 20 to 25 minutes.
