Baked Eggplant

Ingredients
  Eggplant 1 Medium
  Butter/Margarine 1 Teaspoon (To Grease Baking Dish)
  Salt To Taste
  Pepper To Taste
  Egg yolks 2 , beaten
  Grated cheese 1 Cup (16 tbs) (American, Or Kind Of Your Choice)
Directions

Peel eggplant; cut lengthwise into 1 inch slices.
Place in bowl of cold salted water for 1 hour.
Drain; pat dry with paper towels.
Place eggplant in greased baking dish.
Sprinkle with salt and pepper; brush with egg yolks.
Sprinkle cheese over top.
Bake in 350°F toaster oven for 20 to 25 minutes.
