Eggplant And Frozen Tofu In Casserole

Ingredients
  Onion 1
  Bell pepper 1 Small
  Olive oil 2 Tablespoon
  Canned tomatoes 16 Ounce
  Frozen tofu 1 Pound, thawed, rinsed, squeezed
  Salt 1⁄2 Teaspoon
  Pepper 1⁄4 Teaspoon
  Eggplant 1 Medium
  Mozzarella cheese 10 Ounce
  Oregano 1⁄2 Teaspoon
  Basil 1⁄2 Teaspoon
  Water 1⁄4 Cup (4 tbs)
  Grated parmesan cheese 2 Tablespoon
Directions

Repeat eggplant, tofu and cheese layers.
Bake, covered, at 375° for 20 minutes.
Remove cover and bake for an additional 20 minutes.
Let stand for 15 minutes before cutting.
