Eggplant Pasta

Hi GialloZafferano viewers and welcome to our kitchen. Today let's take a trip down to the beautiful island of Sicily to make a traditional dish from Catania -- Pasta alla Norma. Pasta alla Norma encapsulates all of the beautiful aromas from the sunny island, like basil, oil, and tomatoes and of course eggplant which are the base of the dish.

Directions

MAKING
1) Wash and dry the eggplant
2) Using an mandolin, slice the eggplant into slices
3) Sprinkle salt on them
4) Place them on a sieve over a bowl so as to drain the liquid
5) Allow the slices to drain for at least an hour
6) In a frying pan, pour some oil and fry the garlic
7) Add in the tomato puree and allow to simmer, add in the basil leaves
8) Once the eggplants are drained, dry them using a kitchen towel
9) Fry them in olive oil
10) Cut them into strips and reserving some nice slices
11) Grate the ricotta cheese and keep aside
12) Also put the pasta to boil in a pot of water till al dente
13) Once the pasta is cooked
14) Add the pasta to the sauce and mix it in
15) Finish the dish off by mounding some pasta in a dish, place the eggplant slices and top with ricotta gratings and a basil leaf

SERVING
16) Serve the dish warm
