|Spicy sausage||1⁄2 Pound|
|Green onions||3 , chopped|
|Celery||1 Cup (16 tbs), chopped|
|Corn bread stuffing mix||6 1⁄4 Ounce (1 Packages)|
|Pepper flakes||1⁄2 Teaspoon|
|Cheddar cheese||2 Cup (32 tbs), grated|
Peel and dice eggplants; cook in salted water until tender.
Drain well and set aside.
Saute" sausage in skillet until well-done; remove to paper towels: set aside.
Saut6 green onions and celery in skillet until transparent; set aside.
Prepare stuffing mix according to package instructions.
Combine eggplant, sausage, onion/ celery mixture, salt, pepper and stuffing mix.
Transfer to shallow baking dish.
Top with cheese; broil until cheese is melted.
