Sauteed Eggplant In Orange Marmalade Sauce Topped With Mint

Saltandpepperchef.com Co-star Chef "Tee" Terrell Danley shows you how to make minted eggplant that he serves with braised lamb shanks. Chef Tee and Co-host Brian Reeve shake things up in the kitchen.
Ingredients
  Eggplant 1 , cut into fingers
  Onion 1 , diced
  Tomato 1 , diced
  Orange marmalade 1⁄4 Cup (4 tbs)
  Salt and pepper To Taste
Directions

MAKING
1. In a large skillet, heat oil over medium-high heat, add eggplant, saute for 4 to 5 minutes, until the color changes.
2. Add onion, saute for another 4 to 5 minutes.
3. Add tomatoes, stir in marmalade. Season with salt and pepper.

SERVING
4. Garnish with mint leaves and serve over couscous.
