Broiled Eggplant Parmesan
|Parmesan cheese||2 Tablespoon, grated|
Wash the eggplant well and cut off both ends.
Slice the eggplant into four round slices, about one-half inch thick.
Sprinkle each with a little white pepper and the cheese.
Place the slices on a baking sheet and bake uncovered in a 400° oven for 10-12 minutes or until tender.
