Balsamic Roasted Eggplant

This roasted eggplant recipes features eggplants, which are from the nightshade family and also includes potatoes, tomatoes and peppers. Nightshades have a special use in healthy vegan recipes, as they have the effect of releasing mental focus and concentration. This is helpful to those who have very stressful and focused jobs.
For orange glaze
  Orange 1 , zested and juiced
  Olive oil 1 Tablespoon
  Tamari 1 Tablespoon
  Ginger 1 Inch, grated & juiced
  Cinnamon 1⁄4 Teaspoon
  Nutmeg 1⁄4 Teaspoon
  Paprika 1⁄4 Teaspoon
For veggies
  Beets 3 Large, peeled and sliced
  Carrots 4 Large, sliced
  Parsnips 2 Large, sliced

1.Start by mixing the sauce ingredients together and setting them aside to let the flavors combine.
2.Once the vegetables have been sliced, put them in a baking dish, pour the sauce over them and put them, uncovered, in an oven at 350 degrees F. Roast them until they are soft, which will take about 45 min. Stir them every 15 min. or so to keep them moistened with the sauce.
