Oyster Eggplant Treat
|Onion||1 Small, chopped|
|Eggplant||1 Small, peeled and sliced|
|Cracker crumbs||2 1⁄2 Cup (40 tbs), divided|
|Eggs||3 , well beaten|
|Canned oyster soup||10 1⁄2 Ounce, undiluted (1 can)|
Place onion, eggplant, water, and salt in a 1 1/2 quart casserole.
Cover with waxed paper.
Microwave at HIGH 6 to 7 minutes.
Stir once during microwaving.
Let stand, covered, 3 or 4 minutes.
Add 1 1/2 cups cracker crumbs, eggs, and oyster soup.
Spread remaining crumbs on top.
Microwave at HIGH 10 to 12 minutes.
Rotate dish 1/2 turn after 6 minutes.
Let stand, covered, 3 to 5 minutes.
