Fried Eggplant Sticks

Ingredients
  Eggplant 1 Large
  All-purpose flour 1 Cup (16 tbs)
  Salt To Taste
  Pepper To Taste
Directions

Peel eggplant and cut into 2- x 1/2 inch sticks.
Season flour with salt and pepper.
Dredge eggplant in flour.
Fry in hot oil until golden brown; drain well.
