Eggplant Tomato Stack Ups
|Eggplant slices||12 , cut 1/2 inch thick|
|Seasoned salt||To Taste|
|Tomato slices||6 (Thick)|
|Processed swiss cheese slices||6 , halved|
Sprinkle eggplant with seasoned salt.
In skillet fry eggplant on range top on both sides in butter till nearly tender, about 5 minutes.
Tear off six 6-inch squares of heavy-duty foil; place one eggplant slice on each piece of foil.
Top each with one tomato slice and a half slice cheese; cover with remaining eggplant slices, then remaining cheese.
Seal foil packets loosely.
Grill over medium coals till heated through, 5 to 8 minutes.
