Seafood Stuffed Eggplant

Ingredients
  Steamed snapper/Cooked shrimp 1 Pound
  Eggplants 2 , halved
  Soft bread crumbs/Buttered croutons 2 Cup (32 tbs)
  Onion 1 Small, minced
  Parsley 1 Tablespoon, minced
  Butter 1 Tablespoon
  Salt To Taste
  Pepper To Taste
Directions

Cook the fish.
Steam the eggplant.
Remove the pulp and mix with fish and other ingredients.
Bake until heated through.
