Baked Eggplant makes an amazing entree! This Baked Eggplant can be served as a vegetable side dish, or as part of the main course, these baked eggplant are a tasty addition to any meal. Follow our quick and easy recipe and make your baked eggplant now! I am sure you will love the outcome.
  Eggplant slice 1
  Onion slice 1
  Sharp cheddar cheese 1 Ounce, shredded
  Condensed tomato soup 2 Teaspoon
  Dry bread crumbs 1 Teaspoon
  Thyme 1⁄4 Teaspoon
  Salt 1⁄4 Teaspoon
  Pepper 1 Dash

Cook eggplant and onion in small amount of water until, tender.
Drain; reserve liquid.
Place eggplant and onion in small baking dish.
Top with cheese.
Blend condensed soup, 1 tsp (15 ml) of the eggplant liquid, bread crumbs, thyme, salt, and pepper.
Pour over eggplant; cover.
Bake at 350°F (175°C) for 30 minutes.
